The InchDairnie Distillery was built around a mash filter that utilises types of grain other distilleries struggle to process. Installed before the walls and roof were built, this unusual system allows the extraction of more flavour but also more sugar, and from a variety grains. By combining the mash filter, a fermentation process that is reflective of the season and stills that allow the complex flavours to come through, the boast is that InchDairne can ...open up new corners of the flavour map, not yet reached by other distilleries. Their inaugural release is named RyeLaw and is labeled as a single grain (yet it's made from both single farm malted rye and Spring barley); hammer-milled, mashed, outdoor fermented and matured in new charred oak casks with a claim to be the world’s only precision-distilled malted rye Scotch. It is arguably the cleanest, crispest and most refined rye-style on the planet, as though every grain has been polished before distillation. So graceful as to be almost sake-like, re-tasting reveals more of the rye's character as ryvita biscuits, caraway and peppermint. Effortlessly gliding through the mouth, the mid-palate is almost crunchy becoming bready through the the final stages.
