The Irishman Harvest is built entirely from single pot still and single malt whiskey - no grain, no filler. Triple distillation keeps the texture graceful. First-fill bourbon casks add a soft, familiar sweetness - vanilla, honey, gentle oak. But the real story is in the grain.
