Papa Salt is distilled at Lord Byron Distillery in Byron Bay and was developed over three years by a small team of friends, including Margot Robbie. It took 59 iterations to land on the final recipe, with a clear focus on creating a gin that's clean, sessionable and quietly distinctive.
Bottled at 42.8% ABV, this is a modern Australian coastal gin built for versatility. The standout ingredient is oyster shell, which adds a gentle minerality and subtle salinity. It's supported by a refined mix of native botanicals including wattleseed, hibiscus, wax flower, pink peppercorn and citrus peels. Juniper is present but never overpowering - this is a gin that keeps things fresh, dry and balanced.
On the palate, it's crisp and savoury with soft floral and spice notes, rounded by a lightly creamy texture from the grain base. The finish is dry and refreshing, making it an ideal base for longer drinks and low-fuss cocktails.
